Nutritious Coffee Flour Made from Coffee Pulp

Created by an ex-Starbucks entrepreneur, Coffee Flour reduces waste while also providing a nutritious, gluten-free flour alternative.

Extracting coffee beans from their shells leaves behind a large amount of waste pulp, called coffee cherry. Although some of the pulp has been being used, most of it ends up in local waterways or in piles on the ground. Seeking a way to use the material, Dan Belliveau worked with a colleague from NohBell to develop a process to turn the waste into usable flour. The startup company, CF Global, has already secured funding from two giants in the coffee industry and has attracted the interest of award-winning chef Jason Wilson.

The coffee flour goes beyond providing a new nutrient-rich source of food; its production also helps to create jobs while reducing waste and pollution,
