A spectral system able to classify eggs by analyzing the light absorbed by the yolk could help ensure eggs are correctly labeled.

The system is based on the idea that the yolk of the egg is affected by the hen’s lifestyle, such as what she ate or how much she walked around. With that in mind, the team from the University of Santiago de Compostela extracted and analyzed the lipids of known egg classifications. Because the amount of ultraviolet, visible and near-infrared light absorbed by the lipids varies with the egg quality, the team was able to identify each classification’s spectral signature.

According to Professor Manuel Vázquez, “Until now, the proposed methods only allowed a partial differentiation: for example, to discriminate between organic and conventional eggs. Our method is the first one that allows a complete differentiation and with 100-percent accuracy."
