The seneoPro Prints Dissolving Food for the Elderly

The seneoPro 3D-printed food extruder makes life a bit more tasty for the elderly and other people who suffer discomfort when swallowing normal food.

The elderly often suffer from dysphagia, which makes swallowing uncomfortable and can even cause food to find its way to the lungs. People with this condition can only eat pureed foods, which can make mealtimes a tedious affair.

To provide an alternative to liquid meals, the German company Biozoon created the seneoPro—a specially-designed extruder works like a standard inkjet printer. Using a technique called molecular gastronomy, the device prints a variety of powdered foods that have been mixed with a gelatin agent. The gelatin gives the food a solid, more aesthetically pleasing form that will dissolve quickly when placed in the mouth. The foods can be created with different textures and colors, and can also be formed in to a variety of shapes.
