To create unique products that are differentiated by texture or taste, PepsiCo is interested in novel technologies for food product dehydration or pre- or post-dehydration technologies using existing or novel dehydration methods. As a critical core technology in food processing, a variety of technologies have been developed. PepsiCo has extensive expertise in this area, consequently the interest if for new and emerging processes only. The preference is for technologies with proof of principle.

Technologies of interest include those that:
  • Provide dehydration that creates a differentiated texture or taste.
  • Involve pre or post-dehydration treatments to provide a differentiated texture or taste using existing or novel dehydration methods

Known technologies or combinations of the following dehydration approaches are NOT of interest:
  • Microwave-assisted drying
  • Infra-red (IR) drying
  • Radio frequency drying
  • Freeze-drying
  • Fluidized bed frying
  • Convection frying
  • Super-heated steam drying
