PepsiCo seeks new technologies for the production of healthy, minimally processed fruits and vegetables that are shelf-stable for 12 to 18 months without loss of quality, specifically, flavor, color, texture, and nutrient value.

These include alternative methods to bind water (i.e., reduce water activity), for example, a technology to create a product with 20% water content but the texture, crunch, and shelf-life of a product with only 2% moisture; edible barriers or coating technology that prevents moisture migration; novel packaging; or approaches to treat whole or thick pieces of fruit or vegetables with high moisture content to maintain quality.
