- Started a new hire program identification of beef steak cuts that trains new hires to identify steaks by name shape size and marbling .One Each of the special cuts of beef are put onto a table for all to see. I explain each one in detail, Then I ask them to turn around as I mix the cuts into different positions, then have them turn back around . Then ask one to point out a certain cut that I have described and in detail explain which cut it is. This program was very productive in reducing recooks of steaks by 30% enabling more effective ticket times customer satisfaction and bottom line food cost.
