Edible Film Protects Seafood from Toxic Bacteria

An edible film able to kill toxic bacteria in seafood could offer an easy way to protect against dangerous pathogens.

Seafood, in particular, needs to be protected against potentially deadly pathogens. To help reduce the risk of illness, the team from Pennsylvania State University joined with research groups from Thailand to create a gelatin made up of a biodegradable polymer derived from cassava, thermoplastic starch, and embedded with antimicrobial agents. When an item of seafood is dipped in the gel, it dries into a flexible film that can be frozen and vacuum-packed along with the fish to kill bacteria while the item is stored.
