PEGS Tags Detect Food Spoilage

The inexpensive PEGS system helps reduce food waste by detecting spoilage to offer a more accurate use-by date.

Developed at Imperial College London, the PEGS sensors (paper-based electrical gas sensors) are made up of carbon electrodes that have been printed on cellulose paper and are combined with NFC tags. Once in place, the sensors will detect minute amounts of gases that indicate spoilage quickly and accurately, with the results readable by a mobile device. The prototype PEGS tags also cost much less to manufacture than current options, which could help them find their way into markets sooner.
