The Wakati offers an affordable way preserve fruit and vegetables in tropical climates by taking advantage of the hot, humid air.
The Wakiti's design was based upon the observation that traditional evaporation coolers don’t actually lower the temperature within very much. It consists of a tent-like structure able to hold up to 330 lb. of produce and a solar-powered ventilator that slowly evaporates about six ounces of water week a create a humid environment inside the tent. The humid environment helps to reduce drying and keeps the plants' cell walls intact.
Although the Wakati does not control temperature, its evaporative system can increase a one- to two-day shelf-life to ten days—long enough to give the farmer extra time to get their produce to market.
