System and Method for Obtaining, Grading and Selecting Olive Oil

The invention comprises the steps of selecting a mill (1); pressing the olives in said mill (1), pressed pulp thereby being obtained; beating the pressed pulp; separation into the solid phase, known as "alperujo", and a mixture of oil and water; extraction of the solid particles from the mixture of oil and water; settling, filtering, storage in a warehouse and sampling. The steps are monitored by means of product RFID tags (7), which accompany the product throughout the entire method, which tags record information relating to the parameters measured by sensors in each stage. Depending on the information recorded on the product RFID tags (7), the production process is monitored in real time, the streams of product being manipulated by means of electrovalves (8) controlled by intelligent systems and the parameters of anomalous aspects being corrected.
