The startup FoPo aims to help end world hunger by turning almost expired produce into a nutritional and easy-to-store powder.
Created by a group of students at Lund University, the powder is created from near-expired fruits and vegetables by freeze drying the produce to preserve its nutrients and stop spoilage. While the freeze-drying process is not necessarily new, what is innovative is the teams’ goal of “taking dumpster diving to the next level” by collecting old produce and transforming it into a powder that can last up to two years. The dried produce retains between 30 and 80 percent of its nutritional value, and can be sprinkled as a topping, baked, or mixed into smoothies.
The FoPo team has been testing the powder in the Philippines, where local farmers have been donating fruits to create a trial batch.
