A new magnetic tongue is able to detect flavors as well as the human tongue, and could lead to the development of automated tasters in food processing plants.
While current devices have only been able to analyze certain carefully prepared samples, the magnetic tongue provides a detailed sensory description. The tongue uses nuclear magnetic resonance spectroscopy to analyze tastes without the need for chemicals.
Eighteen different cans of canned tomatoes were used to test the NMR tongue against human tasters, with the descriptions from both groups correlating.
