Researchers have used the probiotic bacteria from grains and nuts to create an array of fermented products that could increase the number and availability of plant-based milks.
Many people are either unable or choose not to drink animal-derived milk products. To increase the range of choices of plant milks for these individuals, researchers at the Universitat Politècnica de València obtained probiotic bacteria from grains and nuts to experiment with creating plant milk from almonds, oats and hazelnuts, and intend to also study the possibilities of deriving milk from walnuts and chestnuts. Besides offering new choices of plant milks, the research could lead to ways to improve the storage life of commercially available plant milks already on the market.
