A new microwave spore-zapping method could help to keep bread fresh and mold-free for up to 60 days.
The technique, developed by researchers at Texas Tech University in Lubbock, involves exposing the bread to a sophisticated microwave array that was originally designed to kill bacteria like MRSA and salmonella. The waves kill any remaining mold spores inside the bread in about 10 seconds without affecting the taste of the bread.
The technology could do more than extend the shelf-life of bread; it could also help reduce the amount of preservatives currently added to bread, which in turn would reduce the amount of chemicals needed to mask the preservative taste.
