On the food and nutrient front, the process could be used to protect the supplements as they move through the body and into the digestive system—preventing the nutrients from breaking down or being released too soon—as well as help protect the supplements during storage and transportation. The process can be carried out at room temperature and with relatively simple chemistry, which makes it accessible to the food industry.
