Developed complete technology for manufacture of Cheddar Cheese Flavour Base/ Concentrate in microencapsulated and Spray dried form. A patent is filed for this technology in India. The patent was filed in 2007 and first objections are removed in 2012. The process is on for giving patent. To develop the technology some of the sub processes standardized are: type of substrate; type and level of biocatalyst and starter culture organisms; incubation conditions and time for biochemical reaction to develop strong flavour; type and level of microencapsulation material; Conditions for microencapsulation of flavor components; condition of spray drying, etc.
