Zapping milk with electron beams could provide a heat-free alternative to pasteurization.
Pasteurization has long been the primary method of killing dangerous bacteria in milk, but the heating process also destroys some of the nutrients. As an alternative, researchers at Texas A&M have used electron beams to disrupt the bacteria’s DNA, which kills the organisms without altering the milk’s nutritional content. The process does result in some changes in aroma, as well as an increase in riboflavin.
