Onion phenolics and flavonoids are types of phytochemicals, which are antioxidant chemicals that protect plants against bacteria, viruses and fungi. Phenolics and flavonoids, like other antioxidants, help prevent cancer by mopping up cell-damaging free radicals and inhibiting the production of reactive substances that could damage normal cells.In the research,water immersion extraction, was used to extract flavonoid compounds from onion. The content of total flavonoids in onions was determined by spectrophotometric methods.The compound and di-sulphuric complex in terms of the pharmaceutical tests indicated an antitumor and arteriosclerosis activity.
